Lump charcoal is pure carbonised wood with nothing added. It burns hotter (400 to 700 degrees) and responds faster to airflow. Briquettes are compressed charcoal mixed with binders. They burn at a lower, steadier temperature (180 to 250 degrees) and last longer per load. Lump is better for grilling and searing. Briquettes are better for low and slow cooks.
Commodities NZ Ci-5 lump charcoal. It is made from dense Vitex pubescens hardwood, burns hot with low ash, and the pieces are large enough to last a full cook. What matters most when choosing charcoal for BBQ is the wood species, piece size, and proper carbonisation.
Manuka is the all-rounder. Strong aromatic smoke, hot burn, suits most meats. Pohutukawa is milder and sweeter, better for red meat and long cooks. Fruitwood (apple, pear, plum) is the lightest, best for chicken and fish. Start with manuka if you are not sure.
